Apricot
Candy
2 lbs. dried apricots
2 cups sugar
1 cup water
1/2 cup blanched almonds
In a food processor, finely mince the apricots. In a large pot add water and the apricots
and slowly simmer until the apricots thicken. Add 1/2 the sugar, 1 cup, to the apricots
and simmer for another 10-15 minutes. Let the apricots cool. With hands lubricated with a
little butter, form the apricot mixture into 1 inch diameter balls. On a sheet of waxed
paper, flatten the balls until they are about 1/2 inch in thickness. Place an almond in
the center and dip in granulated sugar. |
