Chicken Breasts Mexican Style
2 whole chicken breasts, boned and skinned
2 eggs
1/4 c. salsa
1 c. fine bread crumbs
1 tsp. cumin
1 tsp. chili powder
3/4 tsp. garlic salt
1/4 tsp. oregano
4 tbsp. melted butter
Mix eggs and salsa in small bowl. Combine bread crumbs, chili powder, cumin, garlic salt
and oregano in flat pan. Dip halved breasts in egg wash and then roll in crumb mixture.
Repeat a second time. Melt butter in 9x13 inch pan. Roll chicken in butter and place boned
side down. Bake in 375 degree oven for 25-30 minutes until done. Serve with additional
salsa, sour cream, guacamole and a wedge of lime. |
