Chicken Cranberry Mold
Part 1:
1 sm. pkg. lemon Jello plus 1 tsp. plain gelatin
1 c. boiling water
1 c. whole cranberry sauce
1/2 c. orange juice
Combine thoroughly and pour into greased 8 1/2 x 11 dish or mold. Set in refrigerator
until firm.
Part 2:
2 to 3 c. cubed cooked chicken
2 hard boiled eggs (diced)
1/2 c. diced celery
1 c. mayonnaise
1 tsp. grated onion
1/2 c. sliced stuffed olives
1 c. boiling water
1 envelope unflavored gelatin in 1/4 c. water
Pour boiling water over softened gelatin. Gently add remaining ingredients. Mixing
thoroughly, spread over set cranberry layer. Chill several hours until set. Cut in squares
and place on lettuce leaf. |
