Cornflake Fried Chicken
1 broiler-fryer chicken, cut in serving pieces
1 c. corn flake crumbs
1-1/2 tsp. salt
1/8 tsp. pepper
1/2 c. evaporated milk
Combine corn flakes crumbs with salt and pepper. Dip chicken into evaporated milk then
roll in seasoned corn flakes crumbs. Place chicken pieces skin up on foil-lined pan. Do
not crowd. Bake in moderate oven (350 degrees F.) about 1 hour or until tender. No need to
cover or turn chicken. |
