Crockpot Chicken Cacciatore
1 (2-1/2 to 3 lb.) chicken (remove skin)
1 can stewed tomatoes
1 can tomato sauce
2 cloves garlic, diced
1 med. onion, diced
2 stalks of celery, chopped
1 tsp. oregano
1/2 tsp. sweet basil
1/2 tsp. rosemary
1/2 tsp. cilantro
1 tsp. salt
1/4 tsp. pepper
Mix stewed tomatoes, tomato sauce; add rest of ingredients. Mix well. Pour over chicken
and turn crock pot on high until mixture begins to boil. Turn down on low and let simmer
for the day. Serve over brown or white rice. |
