Hawaiian Chicken Salad
2 c. cooked chicken breast, chopped or canned chicken
1/2 c. chopped celery
1 tbsp. minced onion
1/2 c. pineapple, canned
1/2 c. cashew pieces, salted
1/2 c. mayonnaise
1 tsp. Dijon mustard
1/4 tsp. chili powder
1/2 tsp. lemon juice
Mix chicken, celery, onion, pineapple and cashews. Mix ingredients for dressing;
mayonnaise, mustard, lemon juice and chili powder. Mix, chill. Serve in hollowed out 1/2
pineapple shell. |
