Chicken Salad
1 lg. head of lettuce
10 chicken breast halves (boneless) cooked and chopped
1 (10 oz.) pkg. frozen peas (not cooked)
1 pt. mayonnaise
3 stalks celery, chopped
1 green pepper, chopped
1 onion, chopped
1 tbsp. sugar
1/2 box croutons
6 slices bacon, cooked and crumbled
Parmesan cheese
In large bowl, layer 1/2 of lettuce. Place celery, green pepper, onion, peas and chicken
in layers on top. Sprinkle with sugar. Place remaining lettuce on top. Spread mayonnaise
over lettuce. Sprinkle generously with Parmesan cheese. Cover and refrigerate overnight.
When ready to serve, add bacon and croutons. Toss well.
Serves 10- 12. |
