Zucchini Chicken Stew
6 c. water
2 c. zucchini, diced, unpeeled
1 (16 oz.) can mashed tomatoes with juice
1 (8 oz.) can tomato sauce
1 rib celery, sliced thin
1/2 green pepper, diced
1/2 tsp. salt
1/4 tsp. coarsely ground pepper
1 tsp. chicken bouillon granules
2 tsp. sugar
1 tsp. curry powder
1/4 tsp. thyme
1/4 med. onion, chopped
1/2 tsp. Worcestershire sauce
Dash of garlic powder
Dash of paprika
2 c. pre-cooked chicken pieces
Bring to boiling all the ingredients except chicken pieces. Simmer 15 minutes. Add chicken
pieces and heat through. May freeze leftovers. Serves 6-8. |
