Cucumber Cabbage Mold
1 (6 oz.) pkg. lime Jello
2 c. boiling water
1-3/4 c. cold water
2 tbsp. vinegar
1 tsp. horseradish
1/2 tsp. salt
1 lg. cucumber
1 c. finely chopped cabbage
Dissolve Jello in boiling water. Add cold water, vinegar, horseradish, and salt. Chill
until partially set. Pour half the Jello into mold. Cut 10 or 15 paper thin slices of
cucumber. Arrange on top of Jello. Dice remainder of cucumber to make 1 cup. Add with
cabbage to remaining Jello. Spoon over sliced cucumbers in mold. Chill until firm. |
